Whew…What a great last few days!

The past few days have been hectic in the best way possible!  My mom, dad and sister came to town on Wednesday – Saturday with a packed schedule of awesomeness, as usual.  My mom turned 60 in January and my sister and I planned a girl’s time together with her.  This time worked best for us all since the hubs and my sister were on spring break this past week and this worked well for my parents too.  I’ll write in more detail to share what we did later this week although you can probably tell based on the photo in this post. 🙂

The 30 Day Full Body Fitness Challenge also ended for me this past week.  I just created the next challenge and we’ll start that tomorrow…stay tuned.

The past day or so has just been chill, catching up on cleaning, laundry and sleep.  It’s so beautiful out, sun is shining, sliding glass door is open ushering in the fresh air.  Yay spring!

 

What I’m Loving Today! #4

It’s Good Friday!  So no work for the hubs and I.  It’s finally warmish out but rainy…but I’ll take it!  It should be cleared up later enough to get some quality outside time.  Here is what I’m Loving Today…

1. FAMILY VISITS

We were excited to have a visit this week from my uncle in New York.  He travels a lot for business and happened to be in the area.  He came over Tuesday afternoon and once the hubs got home from work we went out to ‘show him the town’. 🙂  With lots to choose from we decided to head to Lancaster Brewing Company for dinner and drinks.  If you’ve never been here it’s a must if you are in Lancaster County.  It’s a cool old warehouse atmosphere and the food and drinks are always great!  Tuesday night was perfect because it wasn’t as busy as it is on the weekend.  I had the Double Chocolate Milk Stout (which I’ve been excited to try) and the Blackbean Burger.  That burger is SO good and spicy…just the way I like it!  If you are going to have the beer sampler bring a DD…this is what we always did our first few times there…aren’t in-laws great?

beer picAfter dinner we headed to the Spring House Brewery Taproom, downtown Lancaster.  We love this place and continue to be drawn to it.  They have one of my favorite beers, Big Gruesome which is a Chocolate Peanut Butter Stout.  Even better if we can eat there but we didn’t this time.  We all had another beer, chatted and caught up and then headed back to the apartment.  It was a short visit but great to see him!  The main reason we moved back north was to spend more time with family and it’s working!

 2. BEER BREAD

This week I finally made the beer bread mix I bought at a Tastefully Simple party.  I had actually never heard of Tastefully Simple until a coworker told me about it and made this bread!  It is so good and so easy, hence the name.  You buy the bread mix and just add beer, butter and bake.  That’s it.

For dinner we also made Healthy Crock Pot Jalapeno, Chicken & Sweet Corn Soup from KraftedKoch.  Of course I substituted Quorn Chik’n Tenders for the chicken.  This is the second time we’ve made this and it’s so good every time.

3. CADBURY CREME EGGS

Tis the season!  Easter is almost here and I love Cadbury Creme Eggs!  Growing up we would always get two in our Easter baskets along with other goodies via our church fundraiser from Henry’s candies in Alden, NY.  Usually an invisible ink book too…yeah!  Cadbury Creme Eggs were always a hot commodity for trade in our household and I may or may not have stolen one or two from my parents Easter basket over the years…shhhhh.  Now they are so easy to find and available pretty much all year round because they came out with Halloween ones too.  It definitely makes it a tad less special but none the less I love them and I know when my parents visit next week my mom will bring me a few.

Cadbury Creme Eggs

I think making butter creme eggs at Easter is apparently a thing around Central PA.  I have never heard of people making these before but at work so many people were talking about this tradition and even groups at school were selling them as a fundraiser.  I am assuming it’s similar to a Cadbury Creme Egg but not sure…I was promised a few so I can find out. 🙂

4. SPRING!!!

Yay!  Signs of spring are all around.  April showers bring May flowers and I’ve spotted a few!

What I’m Loving Today! #2

What I'm Loving Today!

It’s Friday…and it’s snowing…again.  Hopefully the last snow of the season.  In protest of winter I took a sick day today (cough cough 😉 ).  Actually it’s supposed to snow all day but not really stick to the roads but I didn’t want to chance it so I said screw it…sick day.  Great day to catch up on things and my work place has a use them or lose the policy so.

What I’m Loving Today:

1. SPRING!

Today is also the first day of spring!!  Yay!  It’s been teasing me for some time now.  I feel the warmer weather calling my name.  Beach season soon.  Spring colors in my wardrobe.  The whole thought of it makes me happy.

2. THE TODAY SHOW

Since I am ‘sick’ today I get to turn into the Today Show!  I love this show.  It’s light and fun and I enjoy the anchors banter.  I used to get up and ready for work as soon as I heard the NBC ‘ding ding ding’ at the beginning of the Today Show when I lived about 5 minutes from my old job but now that my new job starts earlier and my commute is almost an hour I hardly get to see it.  If I hear the opening chime now I know I’m running late!

3. BIORE DEEP PORE CHARCOAL CLEANSER

This is my current facial cleanser and I love it!  I have pretty oily skin and this makes my face feel so clean.  You wet your skin, pump out a little on your fingers, rub your hands together to lather it up a bit, wash and rinse.  It feels fresh and rinses clean.

4. THIS RECIPE: Chopped Thai Salad with Coconut-Curry Dressing

The hubs and I have been really good about planning our meals and grocery shopping on the weekends so we are good to go during the week.  We’ve been using the recipe app ‘Paprika’ to store and organize the recipes (that will be another post!).  Yesterday he made ‘Chopped Thai Salad with Coconut-Curry Dressing‘ from the blog ‘The Wicked Noodle‘, which of course I found via Pinterest.  We were a little skeptical since we haven’t always had the best luck with kale but it was amazing!  The dressing especially we would make again and again for other items as well.  It was so tasty and so healthy and pretty filling for a salad!

5. FITBIT

I have had a Fitbit for about a year and a half now.  I first had the Fitbit Force, which was recalled because it was causing a rash.  I never turned it in because of recall since it didn’t affect my skin.  However after almost a year it broke and I turned it in then under the recall and with no issue received a cash refund.  Right away I went and bought the Fitbit Charge, which had just come out.  Love it!  This one is pretty much the same as the Force with a few added features my favorite being the caller ID.  So when someone calls me it buzzes my wrist and shows who is calling.

A few weeks ago I noticed that my Fitbit back was coming off.  It was weird because it was broken in a way that the Fitbit never bends.  Anyway, I filled out a form on their website and sent a photo of what happened and within a week they sent me a brand new Fitbit, no questions asked.  I love this company’s customer service.  I’ve had friends that have contacted them about different issues and they have all had their’s replaced.  I have a great story about my dad and the Fitbit he received from me as a Christmas present.  That will be for another day.
